A healthy(ish) tuna avocado burger

Being pescatarian, I’ve always struggled to find a satisfying, healthy alternative to a chicken or turkey burger. This delicious recipe is zesty and hearty, but full of goodness. The recipe below makes enough for 2 burgers.

Ingredients

2 x tuna steaks

2 x brioche buns

1 x avocado

1 x lime

Half a red onion, diced

A few baby gem lettuce leaves

A tablespoon of olive oil 

For the sauce

2 tablespoons of light mayonnaise

1 teaspoon of rose harissa

Half a teaspoon of garlic granules

1 teaspoon of smoked paprika

A squeeze of lemon juice

A pinch of salt & crack of pepper

Recipe

1.     Before cooking the tuna steaks, mix all the sauce ingredients in a bowl and set aside until assembling the burger.

2.     Heat the olive oil in a small frying pan on a medium heat. Once hot, add your tuna steaks – keep them still on the pan, so they have time to crisp slightly. After 2 or 3 minutes, flip the tuna steak to sear the other side, until browned and cooked through.  

3.     Smash the avocado in a bowl, add the chopped red onion, a generous squeeze of lime juice, and half a teaspoon of salt. Mix together.

4.     Assemble the burger by spreading the sauce on the inside of both the base and top of the brioche bun, before adding a dollop of avocado mix, followed by the tuna burger, lettuce leaves and another drizzle of sauce. I like to serve with a side salad or sweet potato fries.
